A couple of things jumped out at me while reading your post.
One, you wouldn't be insulting any reputable breeder by asking specific questions regarding their health testing policies. In fact, the opposite would be true. They'd most likely appreciate the fact that you've done your homework and know exactly what you're looking for. So I wouldn't worry about that. Two, if you're looking to get an 8 week old puppy you'll have to wait until he/she is 18 months old before they can go on these long walks. If you "force" exercise on a puppy any younger than 18 months you're risking harming the puppies growing bones and joints. A romp around the yard or even a shorter walk around the block is ok for a puppy so long as it's at their pace and the can rest when they need to though. With all that said, have you consdered rescuing? You could adopt an older puppy to a younger adult who's already at the age of being able to go on long hikes. You'd also be giving a needy dog a home. If you're set on getting a puppy, I would recommend contacting your local boxer club. They might be able to assist you.

Try googling the Western New York Boxer club. They'll definitely have some breeders to put you in the right direction. And don't forget there's always rescue too!

Also, you might start narrowing it down to whether you want an American or European type boxer - both have different temperaments and drive. The European boxers tend to have a shorter muzzle too and stockier in build.
