I've been feeding mainly various different types of steak for beef. I know we can feed beef heart, but I'm wondering if you have to do the slow transition with it comes to heart as you would if it were a new protein source. I'm assuming you do since it's probably richer than normal meat, but want to make sure. I'm putting my list together for my next big shipment and need to know how much of everything I'm going to order.

You are correct. Introduce is slowly as it is richer than steaks. Both Karma and Destiny love it.
