Firstly, It will get better, Sally sleeps in the Laundry and until she was about 4-5 months I would regularly wake up to poop and/or pee in the laundry. Since then she has learnt to hold.

Secondly, I have noticed with Sally that often she will do a double poop, one poop and then another within 5 minutes. This has only been since I have had her on Wellness Puppy. The previous food she did one poop and then waited a couple of hours till the next one.
Because I watch her when I let her out to pee first thing in the morning I have learnt to recognise her movements of "I'm done." Sometime she will try to go back inside when I know she isn't done... I just have to persist. And it takes time to learn her signals.

As to going the moment she has finished eating, Sally was horrible at doing that with wees... it go to the point I would take her food off her before she was done and take her out to wee. But again as she gets older she will learn to hold better.

Lastly, Jersy is SO cute! Have fun with her!
