Much better day today...but still a concern and question

Well..with the bird incident and Jetta's sudden explosive diarrhea last night...I figured today would HAVE to be better..and boy was it!  The bird seems to be doing ok...just watching for infection as who knows what germs were in Bo's mouth...blah...

Jetta is back to her usually wiggly, happy, hungry, playful , instigator self...no signs of explosive diarrhea...both dogs are happy and healthy looking...always  ready to cuddle...man both like to be in my lap at the SAME time...that's like 80 lbs of dog in my lap!  Both are attached to mike adn i...very attached...like super glue, lol...

Bo is working on his recall...jetta has it almost down..both are doing good with sit, lay, stay, come, sit from lay...lay from sit..etc...and BO IS CATCHING TREATS now!  YAY BO!

Now I do have a concern...

WE take Bo and Jetta to my mom's house at least 1-2 times a week to use the backyard and exercise all 5 dogs...

Well..Simba is my sis' and mine's gsp/golden retriever/sheltie mix who is almost 8...acts like a puppy still..sweet as can be...but inside my mom's house he HATES Bo...The first night we got Bo..he went to my mom's house...and they growled at each other and snarled..I thought Bo was doing it as Simba has never done anything like that before...I separated the two and waited two weeks before taking Bo back over there...

The next time there were some under the breath growls from Simba...but Bo was just a happy boy and nice to everyone...

Fast forward another 3-4 weeks...2 weeks ago we had them over...and bo just wanted to play and play and play and Simba only wanted to play with Jetta...Simba gave the normal "under the breath" growl and Bo didn't listen...it ended up with both dogs on hind legs, teeth snarling...and it looked liek boxing...but not nice boxing..mad boxing...no bites...no injuries..both dogs stopped when we told them no...

We figured..ok..Bo had been there 3 hours..Simba is tired...

Well today we were back over there...and after an hour or so of playing in the backyard...I brought all 5 dogs in...and Bo and Simba do the boxing again...again no biting...listened when we said no...and Simba started it again...

What should I be doing differently to prevent this? Both dogs are very sweet, very good with other dogs (except each other) and it's important to me for my mom to see and get to know both Jetta and Bo..she is already attached to both dogs...

again might not be the popular answer but dogs tend to figure this out for themselves....being pack animals they have pecking order...if they're not actually fighting I say let them figure it out themselves....they understand it much better than we ever will
I don't advise letting them work it out.  If you are the "pack leader" you are to take charge of your pack and monitor behavior.  It sounds to me like the older dog is probably tired, particularly of the rough play from a puppy due to your description of Simba wanting to play with Jette and not Bo.  I would keep the sessions between these two short and sweet, if not both are practicing bad behaviors.  Put the older dog up when the young pup is out ramming around so she doesn't have to try to correct the Bo in her own way.  I have a three year old boxer who doesn't like to put up with my 1 year olds antics and I have to intervene occasionally between the two.  I tell the pup to "mellow out" and am persistant tell she gets the hint.  Otherwise all play stops at my house.
