This has been a holiday favorite for the last 20 years in my house.

2 dozen med to large clams
spaghetti sauce(any flavor)
pepper jack cheese

Clean clams and save juice and sheels. Rinse any shell fragments off clam meat through a colander and chop up clam slightly. Arange clam shell halves in a cupcake baking pan so they hold liquid. Put 1 teaspoon of clam in shell followed by 1 tsp of spinich, followed by 1 tsp of sauce and 1 tsp of the clam juice. Bake at 375 for @20 minutes. Remove from oven and add a 1"x1"x1/4"" square of the cheese to the top. Top with 1 tsp of sauce and clam juice and bake for another @10 minutes. Remove and let cool for a minute and then enjoy.:cheers:

Fresh clams are only available in the R months(oct-dec)

Use the rest of the clam juice for clam chowder........thats another recipe I have.:drool::dance:
