Blue is about 6 months old now, and I am wondering when its time to start the switch to adult food.  I have talked to others who have told me they never feed their boxers puppy food, and others who tell me to keep him on puppy food till he's a year old.  So which is it?  Would now be a good time to start the switch or should we be waiting a couple more months?

6 months is a good time.  IMO "puppy food" is nothing but marketing.  Most human grade kibble offer an "all life stages" formula that has one brand - all ages.

Main focus is looking at the protein content levels.  For a pup under 18 months I would advise to sticking with a kibble under 26-24% protein.   Hight protein can lead to accelerated bone growth, in which the supporting tissues and muscles cannot keep up with the growth, thus causing injury.
